I feel a little bit of a fraud calling these Peanut Butter Jelly style as we call Jelly Jam over here in the UK, but Peanut Butter Jam sounds rubbish so can we agree to let me off this time?
If you’re anything like me, then I can tell you’re already a massive peanut butter fan. Put Peanut butter with anything and my ears perk up.
I love Banana Bread too, so why not combine both?
Having individual mini Banana breads is great if you’re on the go as they’re already portioned up! However if you’d rather create one big loaf, the same recipe will work but cooking time may vary. Keep checking your banana bread by stabbing a skewer into the middle. If it comes out clean your Banana bread should be cooked!
2 Medium Ripe Bananas
2 Tbsp Maple Syrup
1 Tsp Vanilla Extract
140g Spelt Flour
50g Ground Almonds
1 Tsp Baking Powder
2 Tbsp Almond Milk
Meridian Crunchy Peanut Butter
Jam of choice
– Mix the wet and dry fillings separately before combining.
– Half fill the loaf dishes with mix before putting a teaspoon of peanut butter down the centre of each.
– Cover the Peanut butter with the remaining mix and top with some Jam (Leaving a bit of room for rise).
– Bake at 180C for 35 – 40 minutes
