Love Peanut Butter? Love Pancakes?
Why not try some Peanut Butter Pancakes! (Because let’s be honest, who doesn’t love PB and pancakes?!)
Just for the record,this isn’t simply peanut butter on some pancakes. No, we’ve all done that a million times… This is peanut butter INSIDE some pancakes.
Now I’ve got your attention, check out the recipe, mix, flip and enjoy!
Serving suggestions? Why not add some fresh fruit, some low-cal ice cream or some extra peanut butter. I used Greek yogurt, some more PB and some berry mush (which is my very technical term for microwaved berries) to top the ones in the picture but the recipe is so good you’ll definitely make it more than once so plenty of room to experiment! 🙂
Peanut Butter Pancakes
150g Spelt Flour (Can be substituted for plain flour)
2 Generous Tbsp Meridian Crunchy Peanut Butter
2 Tsp Sweetener
1 Tbsp Baking Powder
1 Tbsp Maple Syrup
1 Tsp Vanilla Extract
200ml Almond Milk
-Slightly beat the 2 eggs
-Combine all of the other ingredients in a bowl and mix well making sure there’s no lumps of flour.
-Fold in the 2 eggs.
-Pre heat your pan to a medium to high heat. Add some low calorie spray or a small amount of coconut oil to the pan before frying your first pancake. (I suggest only using a small amount of mix as a test pancake to make sure the pan is at the correct heat. Don’t want to be wasting a whole pancakes worth of batter if it’s not right!)
