Pecan Choco Banana Bread

It’s been a while now since I made my Pecan and Chocolate Banana bread but I still consider it one of my favourites.

I’m a big fan of banana bread as a whole, not only does it taste great, but it gives me something to make with my over ripe bananas, reducing food waste.
After being asked by the guys at Meridian food to come up with a recipe using their Pecan Butter (which tastes amazing by the way) I came up with this! Combined with my Maple and Pecan cream cheese this made the perfect snack

Pecan Choco Banana Bread
2 Large Ripe Bananas (Mashed)
1 Generous Tbsp Meridian Pecan Butter
300g Flour (I used Spelt)
1 Tsp Baking powder
3 Tbsp cocoa powder
1/2 tsp Salt
1 Tsp Vanilla Extract
1/2 tsp Cinnamon
50ml Maple Syrup
50ml Almond Milk
Place the flour, baking powder, cocoa powder, salt and cinnamon in a bowl. Mix in the other ingredients until the mixture is fully combined.
Bake for 50 minutes at 180C. Insert a skewer into the bread to see if it is ready, if it comes out clean, remove from the oven and place on a wire cooling rack.
Optional serving suggestion
Pecan and Maple Cream Cheese
1 Tsp Pecan Butter
1 Tbsp low fat Cream Cheese
1 Tsp Maple Syrup
