Almond & Honey Protein Cookies

My partner is a biscuit fiend. It doesn’t matter what the biscuit is, or how big the packet is, he will happily sit and scoff the lot.

His favourite are chocolate chip cookies, especially the big ones that normally come in packs of 4 from the baking section at the supermarket.

So as an alternative I decided to make these Almond and Honey cookies. They must’ve gone down well, as I’ve had to make two batches now, one with mini eggs for Easter and some normal chocolate chip ones.

Atleast it’s reduced the amount of biscuit packets on his car floor…

Almond and Honey Protein Cookies

Ingredients

30g Vanilla Protein
1 Cup Oat Flour
3 Tbsp Almond Butter
3 Tbsp Honey
1 Egg
1 Tsp Vanilla Extract
Chocolate Chips Or Mini Eggs

Method

– Combine all of the ingredients in a bowl and mix well.

– Roll into balls and flatten onto a baking tray with baking paper

– Bake at 180C for 12 to 15 Minutes (please note, cooking times may very depending on the size of your biscuits)

– Remove from the oven and place onto a wire rack to cool.
