Back in February I decided to do a whole pancake week instead of just pancake day.
7 days. 7 different pancakes.
Easily the best looking out of these 7, was my Blueberry Smoothie Pancakes. From the outside, they looked like your normal oat pancakes, but inside they were a beautiful blue colour (which my photos don’t quite do justice).
Vanilla and blueberry is a common combination. Why? Because it works well. To balance out the juicy frozen blueberries I decided to add a splash of vanilla extract as well as the vanilla flavour sachet from my favourite protein company, Whey Box.
The mix made me 6 pancakes, 3 I ate straight away, 3 I popped in the fridge for the next day.
I hope you enjoy these as much as I did!
– Blitz the oats, blueberries, almond milk, protein, maple syrup and vanilla extract in the food processor until you get a smooth mixture.
– Whisk the egg whites before folding into the mix.
– Cook on a medium to high heat using a small amount of coconut oil or low calorie spray.
