Protein Jaffa Cakes

Double Chocolate Orange Protein Jaffa Cakes. One of the first recipes I came up with when I started my healthy eating Instagram account. To be honest, I had completely forgotten about them until I was looking back through my recipe book deciding what I should put on my blog.

Shop bought Jaffa cakes claim to have just 1% fat each, but how much sugar and other stuff are in them? That’s why I decided to create my own using cleaner ingredients, with the added bonus of the extra protein.

Double Chocolate Orange Protein Jaffa Cakes
1 Cup of Ground Oats
0.5 Cups of Ground Almond
3 Tbsp of Maple Syrup
1 Egg White
4 Tbsp of Coconut Oil (Melted)
1 Tsp Baking Powder
1 Sachet of Whey Box Chocolate Orange Protein
Sugar free Orange Jelly
Dark Chocolate

Make up the orange jelly as per instructions (or make your own if you have a little more time!) I advise adding extra gelatin or using less water so the jelly is thicker (but you don’t have to). Pour the mix onto a cling filmed tray or into a container so it is around 5mm deep and place in the fridge to set.

Whiz the Oats, Almond, Maple Syrup, Egg white, Baking Powder, Coconut Oil and Protein in the food processor. Once mixed transfer into greased muffin trays. Bake at 160C for 5-8 mins (This doesn’t seem long but any longer they will turn to rock!)

Once the jelly has set, cut into rings and place onto the top of each baked base. Then melt the chocolate, add to the top and viola! Protein Jaffa Cakes
