Easter Oatmeal Cups

Easter might be over, but if you’ve anything like me, you’re now surrounded by chocolate. Here’s a simple recipe to use up some of that chocolate while still eating relatively healthy.
This recipe asks for mixed seeds and nuts, I went for pumpkin, chia, flax, walnuts, hazelnuts, cashews and almonds in this particular batch, but feel free to go for whatever you fancy! You could even add some extra chocolate depending on how much you’ve got to use up!

Ingredients
1 & 1/2 Cups of Oats
1/3 Cup of Mixed Seeds
1/3 Cup of Chopped Nuts
1 Sachet of Whey Box Vanilla Protein Powder (Other flavours would work well too! Be Creative!
3/4 Cup of Almond Milk
1 Egg
2 Tbsp of Nut Butter
2 Tbsp of Maple Syrup
1 tsp Baking Powder
Method
– Mix all of the ingredients into a bowl and evenly divide into a greased muffin tray.
– Bake at 170 for around 30 minutes
– Allow to cool before decorating with your favourite easter treats, I used Mini eggs attached with 80% Dark chocolate (You could always use up some of your Easter eggs here!)
Note: I like these nests as they are, however if you would like them to be sweeter add some extra maple syrup or sweetener.
